One of the best recipes that I have learned from my family, is how to make a spicy salsa that can go with any dish. I prolonged sharing this recipe with you all for the simple fact, that I did not have the main tool to be able to make this which is a molcajete. One of my coworkers was going to Mexico for little vacation and asked me if I wanted anything. I jokingly said I wanted one and he actually came back with one! I was so shocked and taken aback, but above all super excited that now I was able to make this salsa! The things you will need are...

  • Salt to taste
  • Cilantro
  • 2 garlic cloves
  • 1/4 of onion
  • 2 small tomatillo's
  • 1 large tomato
  • 2-4 chile serranos (depending on how spicy you would like it)

1. With a heated flat skillet, add the tomatillo's tomato, chile serrano's garlic cloves and onion to toast.

2. Flip over the vegetables so all four sides get toasted equally.

3. Once they are all toasted, transfer into the molcajete or the blender.

4. Using the rock, smash all veggies together until all is mixed thoroughly. Smash to your desired consistency.

5. Add salt to taste and garnish with cilantro.

ENJOY!

It is a New Year and this year there will be more recipes coming your way! To kick off this new Year, I decided to go with my all time favorite soups which is Chicken Pho. As I was reading up on several recipes, I came to the conclusion that Pho has 6 main ingredients. With that being said, I decided to come up with my own version of a Pho soup and I hope you all enjoy it. I also felt it was a great way to be able to warm ourselves up in this time of fidget winds.

The things you will need are...

  • Pho rice noodles
  • Green Onion

  • Lemon
  • 1 Chicken breast
  • Fish sauce
  • Powdered Ginger
  • Jalapeños

1. Start by boiling your chicken breast.

2. Then start boiling the rice noodles, but keep an eye on them for you do not want them to over cook.

3. When the chicken is tender, let it cool down and shred the chicken. Do not discard the chicken broth!

4. In a pot, add 4 cups of the chicken broth, 2 tbsp of Ginger and 2 tbsp of fish sauce.

5. Pour in the chicken and let it come to a boil.

6. When ready to serve, add the noodles into a bowl.

Thanksgiving is here! Are we ready to put our aprons on and enter this cookathon?!
In this post, I am going to share with you my Mother's Roasted Turkey recipe. She has been making this type of turkey for years and its simple but yet delicious. It is juicy and crispy at the same time. I am honored to share this childhood filled memory recipe with you all. The things you will need are...

  • Pre heat oven to 425 degrees
  • Turkey
  • Cheese cloth
  • 1/2 cups of mayo
  • 2 cups of butter
  • 1/2 cups of mustard
  • 1-2 apples
  • 1-2 oranges
  • 1 large onion
  • 1 tbs of parsley
  • 1 tbs of bay leaves
  • 1/2 tbs of salt
  • 1/2 tbs of pepper

Note: You will need to defrost your bare turkey for 3 days in the refrigerator.

1. Wash and dry your turkey with a paper napkin.

2. In a bowl, mix in the mayo and the mustard.

3. Melt the butter and pour into the bowl.

4. Add in the dry ingredients.

5. Mix all together.

6. Gently peel up the skin of the turkey.

7. Using the mixture, coat the turkey between the skin.

8. Once the inner is fully coated, coat the outside of the turkey.

9. Chop the onion, apples and peeled oranges into fourths.

10. Wrap the onion, apples and oranges in the cheese cloth and insert it into the turkey.
This is done so the inside of the turkey can be juicy and not become dry.

11. Tie the turkey legs together so nothing comes out while baking.

12. Place the turkey into the oven and cook per the pound instructions.

13. Bath turkey every 30 minutes with the juices that collects at the bottom of the tray. Turn turkey every hour so both sides get thoroughly cooked.

14. My turkey was 12 pounds so I cooked mine for 6 hours. When the turkey temperature reaches 180 degrees it is safe to say it is fully cooked.

15. Remove the inside cheese cloth and let cool before serving.

16. Happy Thanksgiving!
