Chicken Enchiladas | Enchiladas de Pollo

     One of the most delicious dishes that I love from my Mexican roots, are Enchiladas.  I love to pound on the sour cream and queso fresco on them.  There are many different ways of making this dish.  You can make the sauce from scratch but come on, it's the 21st century there are plenty of short cuts! Ya my grandma may frown upon my shortcuts but really, who has time these days?  This dish can be a bit messy and can stain your clothes if not being cautious. Its like the mole sauce who its victims are white T-shirts. You will need a bit more time for this dish but they will be ready in no time! The things you will need are...

  • Mole Sauce 
  • Chicken
  • Tortillas
  • Pan with oil
  • Bowl
  • Lettuce
  • Onion
  • Sour Cream
  • Cheese
  • Salsa

1. Heat up your pan with a tad of oil.


2. Grab your chicken either boiled or grilled and start crumbling it into strips.


3. Open up the can sauce.


4. Pour the sauce into the bowl.


5. Grab a handful of tortillas and warm them up in the microwave for about 1 minute.


6. Once out of the microwave dip the tortilla into the bowl of sauce.


7. Flip the tortilla over in the sauce.


8. Transfer the tortilla to the hot pan and oil lowering the heat to low.


9. Pour some sauce onto the tortilla to let the tortilla get some flavor.


10. Remove from pan and place on a plate. Add some chicken to the middle of the tortilla.



11. Roll up the tortilla.



12.  Add some sauce to the top of the rolled up Enchiladas.


13. Cut up some lettuce and onion. 


14. Place your enchiladas on a plate and add your condiment. Lettuce, onion, cheese, sour cream and salsa.
