Shredded Chicken Soup | Sopa de pollo Triturar

When spring came around, my Husband got really sick. His allergies got the best of him and bed ridden he went. I did not have fresh vegetables only canned so I thought I could make him an easy chicken soup. The only problem was that I did not have enough chicken, so I decided to shred it instead. I made this dish in about an hour or two, and it was delicious. If you have sick children and need to make something quick, this would be a great dish. The things you will need are...

  • Chicken (any type)
  • Canned Vegetables (I had some mixed vegetables)
  • Salt

1. Boil your chicken removing any foam the pot.

2. After the chicken is boiled, let it cool for 30-45 minutes (DO NOT discard the the chicken broth in the pot!).

3. Once the chicken is cool, start to shred it up placing it back into the pot with the chicken broth.

4. Set the heat to medium and pour in the canned vegetables adding salt to your liking. Let them cook for about 25 minutes checking them to make sure they are throughly cooked.

5. Once vegetables are cooked, serve your shredded chicken soup.

ENJOY!
