Tostadas de Tinga

     One day I had a big craving for some tinga tostadas, but I didn't know if my Husband would be up for it. But when I mentioned it to him, he got really excited. So I decided to give it a try but my only mistake was that I made it really really spicy. So if you would like to make this dish for kids or if you do not like spicy I would recommend to only put 2 chipotle peppers. The things you will need are...


  • 1-2 large chicken breasts 
  • Salt/Pepper
  • 1 can of chipotle peppers
  • 1 large onion 
  • 1-2 large tomatoes
  • Lettuce
  • Sour Cream
  • Queso fresco

1. In a pot boil the large chicken breasts for about 40 minutes or until they are fully cooked.


2. In a skillet warm up a bit of oil.


3. Cut up the large onion into rings and the tomatoes into small cubes.


4. Place the onion rings in the skillet and let cook.


5. Once the onions are get golden brown, add the tomato and let simmer.



6. While the veggies are cooking, in a blender pour in the chipotle peppers and blend thoroughly.



7. Once the chicken is cooked, let cool and start shredding it. 


8. Pour in the chipotle sauce into the tomato's and onions and mix all together.

 


9. Add some pepper and salt to your liking.


10.  Pour the chicken into the skillet and mix all together and let chicken warm up.


11. Once its all warmed and mixed together you may serve. On a tosdada add some beans, the tinga, lettuce, sour cream, queso fresco, and some salsa.
