Chicken Mole | Mole de Pollo

     One of my Husbands favorite dishes is mole. I have never made this dish for my him because I did not know how or where to start. After reviewing some recipes and videos, I decided to give it a try. I made this recipe my own by adding or removing things that I knew my husband would not like. For example, he is allergic to peanuts so I used no peanuts in this recipe. It is simple and fast to make and it is not at all spicy so its safe for kids.  The things you will need are...


  • Chicken (Boneless or with bone your choice)
  • Mole Sauce (Available at any local stores)

1. Place your desired pieces of chicken into a pot to boil with some onion and salt. (I cut small pieces of boneless chicken before hand.)


2. In a pan on medium heat, place the mole sauce and break apart.



3. Add some of the chicken broth into the pan a bit at a time.



(You may also place this sauce into the blender with 1 cup chicken broth for a smoother finish.)

4. After the chicken is cooked thoroughly and the sauce is smooth, add them together.  




5. Let come to a simmer.


6. Serve with some fresh queso fresco and some delicious Mexican rice.
