Chicken Soup | Caldo de Pollo

     Recently, my Husband got hit with a really bad cold.  He was bed ridden for about 4 days, coughing and sneezing every minute.  As a wife, I had to be there to attend his every need but still needed to attend class.  I  thought of what to make him for his cold, and then I thought, why not chicken soup.  My mom would always make chicken soup when me or one of my sisters became sick.  
     There are many ways to make the soup and a lot of people add different kinds of vegetables.  The more vegetables the better to get all the vitamins they offer. You can add, corn on the cob, squash, pumpkin, tomatoes, onion, celery, carrots, and potatoes. Vegetables can be really pricey, so for this segment, I only used 3 different kinds of vegetables for my chicken soup. The things you will need are...

  • Chicken (Breasts, or drumsticks boneless if desired) 
  • Knor
  • Salt
  • Carrots
  • Celery
  • Potatoes
  • Onion
  • Garlic or Garlic Salt


1. Fill up the pot with water and set on stove on high.




2. Cut up the chicken as desired or just put in a pot in bulky pieces (You may remove skin if desired).




3. Add the chicken to the pot with half an onion.




4. Add a clover of garlic or 1/2 tsp of garlic salt. Along with 1 tsp of Knor and let come to a boil.












5. Wash and cut up all your desired vegetables. 




6. Remove any white foam the chicken may let out. 




7.  Once boiling, move heat to medium to low and add the vegetables. 




8.  Cover the pot letting the vegetables cook thoroughly and letting the pot come to a boil. Taste test the soup add salt if needed. (This might take up to 30 minutes).



10. Once the vegetables are soft and cooked thoroughly you may serve in a bowl with a tortilla on the side if desired.
