Ceviche

Alright Ladies! This dish is one of a kind and I recently learned how to make it properly. I visited my Family across the country and my Husband wanted some ceviche. I asked my mom if she could help me make it and she happily agreed. I am delighted to say that for this segment my special guest is my mom! She helped me put it together while I took note and pictures. Now the way that we make it takes a lot of time. We like to make sure that the shrimp is clean and there is no guts or stool in them. It might take you a whole day to make this dish, but in the end it is so worth it. The things you will need are...

  • Fresh shrimp (We used 5 lbs, but it depends on how many people you are cooking for.)
  • 2-3 cucumbers
  • 2-3 carrots
  • 2-5 Chile Serrano (depends how spicy you want it.)
  • 1 large onion
  • 2-3 tomatoes
  • About 20-30 limes or lemons
  • 2-3 avocados
  • A bottle of Tapatillo or Valentina
  • Tostasdas
* You may add any kind of vegetable you may like.

1.Take the fresh shrimp and rinse them thoroughly.

2. Remove the tail and body scale from all the shrimp and toss it to the garbage.

3. Place them in a bowl and then cut open the back of the shrimp and remove the black lining. Then flip the shrimp over and slit the shrimp through the middle and remove stomach lining,
(This is the part that will take most of your time. Many people skip it but like I said, we like our shrimp clean.)

*You may use a small knife to do this.

4. Once all the shrimp is cleaned, rinse them thoroughly.

5. Cut the shrimp in small square pieces.

6. Place them in a bowl then squeeze fresh lemon juice on top of the shrimp. Set aside to let the shrimp cook in the lemon juice. (Do not use the lemon juice in the bottle because the shrimp needs to cook in the fresh lemon acid.)

7. While the shrimp is cooking start cutting up the needed vegetables.

*Shred the carrots instead of cutting them up.

8. Make sure that the shrimp is nice and pink.

9.  Add all your vegetables to the mix and let sit for 15-30 minutes.

10. Serve on a tostada with Tapatillo or Valentina.

ENJOY!
