- 4 Chicken breasts
- 1 cup of Flour
- 1 tbsp of Lemon juice
- 3 Garlic cloves
- 1 lb of fresh Mushrooms
- 1 medium Onion
- 6 tbsp of Olive oil or regular Oil
- 1 1/2 cups of Chicken broth
- 3 tbsp of Butter
- 1 cup Half and Half (I used regular whole milk)
- Salt
- Pepper
- Pre-heat oven at 350 degrees
1. Cut up your chicken breasts into small thick strips.
2. Sprinkle salt and pepper on the strips.
3. In a bowl of flour, cover each strip.
4. In a pan with a bit of oil, place the chicken strips to cook.
5. Cook until lightly golden and place the strips of chicken in a baking dish. (The pieces do not need to be cooked thoroughly for they will be cooked in the oven).
6. In the same pan add a bit of oil and cook the mushrooms, garlic cloves, and onion. Cook until mushroom is cooked thoroughly.
7. After the vegies are cooked, pour them over your chicken strips.
8. Wipe down the pan and add the melted butter and 3 tbsp of flour and mix (Your mix might get dried up and will create small balls of flour, but once you add the liquids it will become creamy).
9. Add your lemon juice and chicken broth, whisk until smooth.
10. Add the half and half or milk and whisk together until the batter becomes creamy.
11. Once creamy, pour over the chicken and mushroom mix evenly.
12. Cover the baking dish with foil and place into oven. Let bake for 45 minutes.
13. After 45 minutes remove from oven and let cool for 10 minutes.
14. Serve with you choice of side.
