Chicken Quesadillas | Quesadillas de pollo

     When my Husband was in college, he did not have time to make any homemade food. He would go to Taco Bell and order the quesadilla and that would do it for him. Looking through the refrigerator, I saw that I had the ingredients, but noticed I had some chicken and left over carne asada. So I decided to give it a twist and make chicken and carne asada quesadillas. I knew off the bat my Husband would love them. These are really quick and easy to make especially if you have really hungry kids. The things you will need are...


  • Flour Tortillas
  • Mozzarella cheese (shredded or not)
  • Hot skillet
  • Your choice of meat (Chicken boneless breast)


1. Heat up your skillet to medium.


2. Cut up the boneless chicken breasts into small cubes.


3. Place them in a pan with some seasoning of your choice and cook thoroughly.


I had some left over carne asada from a bbq, so I decided to cut it up as well.


4. Once the chicken is ready, remove from heat and assemble your quesadilla. Heat up slightly a flour tortilla on the skillet. 


5. Remove the tortilla from heat add the cheese and your meat.



6. Fold the tortilla in half and place on skillet to cook.


7. Flip the quesadilla so both sides cook.


8. Once cheese is nice and melted, remove from heat and if you like cut it in half and place on a plate.


9. Serve with your choice of sides.
