Fried Rice | Arroz Frito

     For a while now, I have been craving some fried rice. My Husband is allergic to anything with peanuts so we tend to stay away from anything that may be cooked with them. Some Chinese restaurants are known to use peanuts or cook with peanut oil. So I decided to look up some recipes that do not have any peanut usage. I came across one recipe that looked really easy to make. I improvised with what I did have available in my home. The things you will need are... 


  1. Oil
  2. 2-3 eggs
  3. 1 can of mixed vegetables
  4. 1 small white onion, diced
  5. 3 cloves garlic
  6. salt and pepper
  7. 4 cups cooked rice 
  8. 3-4 Tbsp. soy sauce


1. In a pan, cook 2-3 eggs and set to the side.


2. In another pan, add a bit of oil or butter and cook the can of mixed vegetables, onion, and the garlic cloves.


3. After vegetables are saute, add the cold rice.


4.Then add the soy sauce.


5. Mix together for 5 minutes, then add the eggs.


6. Mix all together and cover the pan let simmer for 15-20 minutes.


7. Once rice is ready, remove from heat and serve.
