Mexican Corn | Elote Mexicano

    Ever try to chase after the Elote man to get your craving satisfied? I know I have. I love a fresh corn on the cob with extra cheese and chili powder. A quick snack to satisfy that nagging feeling of hunger. But there are times where we just can't track them down so, why not make them ourself? They are easy to make, and might be cheaper than buying them off the Elote man. One thing about these though, is that they can get a bit messy so look out for the kids. The things you will need are...

  • Corn on the cob (It is usually one per person)
  • Mayonnaise 
  • Parmesan cheese or Queso Cojita 
  • Cayenne pepper
  • Butter 




1. Peel the corn.


2. Place peeled corn in in a pot filled with water.


3. Let the corn cook on medium to high heat for about two hours, or until corn is soft.


4. When the corn is ready, drain out the water and let the corn cool. Once cooled spread some butter all around the corn. (The corn must be warm enough for the butter to melt, but not too hot to burn your fingers.)


5. Then spread some mayonnaise all around to your liking. 


6. Add your Parmesan cheese or cojita cheese.


6. To top it all off, add some Cayenne pepper.


7. Once its to your preference, you may serve.
