Homemade Cheesecake | Pastel de queso casero

My Husband is really not a dessert kind of person, so when he asked me to make a cheesecake I was surprised. Luckily, I had previously seen a cheese cake tutorial so I was confident. I combined two recipes I found on YouTube to get the cheesecake to my liking. This recipe you can make without the oven, all you need is to freeze the cake all day, or overnight. I did not make the crust but rather bought it already made. In these recipes, Youtube recipe 1, Youtube recipe 2 they do show how to make the crust from scratch. The cheesecake came out so delicious, I was surprised I was able to make it! The things you will need are...

  • Crust
  • 2 teaspoons of lemon
  • 2 8oz of cream cheese
  • 1 pint of heavy whipping cream
  • 1/3 cup of sugar
  • Any type of fruit you would like

1. In a bowl, place the two 8oz of cream cheese.

2. Add the two teaspoons of lemon juice.

3. Beat the cream cheese until thick and soft.

4. Pour the 1 pint of heavy whipping cream.

5.  Beat the cream cheese until thick and soft.

6. Add the 1/3 cup of sugar. You can increase the sugar if you have more of a sweet tooth.

7.  Beat the cream cheese until thick and soft.

8. Taste test the mixture to see if the sugar is just right for your liking.

9. Pour mixture into the crust and spread evenly.

10. Fill it up to your liking. I believe you can make two cheesecakes with the mixture.

11. Now its time to decorate! You can either do this step after you freeze the cake or before. I decided to do it before freezing because the fruit will stick to the cake.

12. Cut up your fruit and decorate it to your liking.

13. Once decorated, place it in the freezer. You can either place it without plastic wrap or with plastic wrap. I covered mine so it would not get freezer burn.

14. Place in freezer and let it freeze either all day or overnight. I put mine in at 11 a.m. and by 6 p.m. it was ready.

15. After dinner, serve this delicious dessert.

ENJOY!
