- 2 pounds of pork meat (boneless preferred)
- A bag of Chile Guajillo
- Oil
- Pepper
- Onion
- 2 cloves of Garlic
- Salt
1. In a pot, add some water and the bag of Chile. Place on stove top on medium to high heat and let it come to a boil.
2. Cut up the pork meat into small cubes.
3. In a pan, add a bit of oil and pour in the pork meat and pepper to seasoned it.
4. When the meat is half way cooked, add some onion rings and mix all together.
5. Once the Chile is soft remove from heat.
6. In the blender place each Chile removing the stem.
7. Add two spoon fulls of the boiling water.
8. Add 2 cloves of garlic, a quarter of an onion, and a palm full of salt.
9. Mix the contents together on grind or chop mode for about 3 to 5 minutes.
10. When the meat is thoroughly cooked, remove excess oil and pour the blended Chile.
11. Let simmer on medium heat. Add salt if needed or to your preference. Serve with your choice of side.
