Enfrijoladas

     One of my favorite dishes to eat is enfrijoladas. They are rare because not many Mexicans make them. I make them from time to time, but I try to make them when I have the fresh cheese. They taste better with the cheese sprinkled over them. This dish is for those people that love beans and don't mind eating well, just beans. It is a really easy recipe to make and only takes less than five minutes. But you do need to have beans already made. The things you will need are...


  • Beans
  • Flour tortillas
  • Queso fresco
  • Pan
  • Salsa 




1. Heat up pan and add some beans with the juice.



2. Smash the beans, softly but not all the way.


3. Once they are smashed, add a tortilla without warming it up.


4. Submerge the tortilla in the mixture letting the tortilla warm up.


5. Turn the tortilla over being careful it does not tare. The tortilla needs to be mixed well with the beans.


6. Because of the heat, the bean juice will dry up. If it does, just add a scoop of bean juice to keep the mixture watery. 



7. Once the tortilla is warm soft and completely submerged remove and place on a plate.


8. Add a scoop of the bean mixture on top and then the cheese. Add salsa to your liking.
