Cilantro Lime Chicken | Pollo de lemon y cilantro

When I was away for a couple of weeks, my Husband had gone grocery shopping. Since it was just him and had no wife telling him what to not get, he had bought a bag of limes. When I came back, I asked him if he had a purpose for them and he said no. I did not want to throw them out so instead I made a delicious dinner plate. When I served it, my Husband said it was so delicious that it tasted like an asado. You can serve this chicken with beans and rice, but I decided just to serve it on top of some fluffy white rice. The things you will need are...

  • Chicken breasts
  • 2 whole limes
  • Pepper
  • Salt
  • 1/3 cup of cilantro

1.  Cut up your desired chicken into cubes and cook on a skillet with a bit of oil.

2. While the chicken is cooking cut up the cilantro.

3. Cut up the limes in half.

4. Flip the chicken over and add some pepper and salt.

5. Once the chicken has no more pink in the center, add the lime juice. I used the four slices because the limes did not really have juice.

6. Let the juices cook through the chicken, then add a the cilantro.

7. Serve with your choice of side!

ENJOY!
