Spinach, Tomato, Mozzarella, Chicken Pasta Salad | Ensalada de pasta con espinaca, tomate, mozzarella, y pollo

    One day, I felt like making something fresh for dinner. I know how to make salads, but I wanted to make something different than the regular salads. Looking through Pinterest, I came across a very easy recipe that I knew would be delicious. The only thing I did different was add chicken, used mozzarella sticks, and pepper. With or without it, it is so good and its tastes as if you actually bought it in a restaurant. The things you will need are..

  • A box of  rotini pasta 
  • cups grape tomatoes
  • 1/3 cup Italian dressing
  • bag (6 oz) fresh baby spinach leaves
  • 4oz fresh mozzarella cheese, cut into cubes (I used string cheese)
  • 2 boneless chicken breasts
  • Pepper

1. In a pot, cook the rotini pasta.



2. Cut up your chicken breasts in any way you like.


3. In a hot skillet, cook the chicken with pepper (I did not add butter or oil, but only let the chicken cook in its own juices).


4. Once the pasta is cooked. strain it and rinse in cold water.


5. Cut up the spinach.


6. Cut up the mozzarella cheese.


7. In a bowl pour in the cold dry pasta.


8. Pour in the cooked chicken.


9. Add the grape tomatoes.


10. Add the mozzarella cheese.


11. Then the spinach,


12. Top it off with the Italian dressing.


13. Mix all together adding pepper to your liking.



14. You may serve or put in refrigerator to chill for an hour.
