Pork Chops in red chile | Chuletas de puerco en chile colorado

I have done a similar recipe with pork meat, but the only thing that is different is that I will be using pork chops. I use boneless pork chops because my husband does not like the bone, however you can use what you prefer. Just a quick reminder that this recipe can be spicy or it can have no spice, it all depends on the chile. The things you will need are...

  • Half a bag of Chile California or Guajillo
  • Half a bog of Chile de Arbol
  • Hal an onion
  • Salt
  • 2 cloves of pepper
  • Pork chops

1. In a pot, add some water and half the bag of the chiles. Remove as much as the seeds from inside to prevent it from becoming to spicy. Place on stove top on medium to high heat and let it come to a boil.

 2. In a skillet with a bit of oil start cooking your pork chops with some salt and pepper.

3. Once the Chile is soft remove from heat. Drain more than half of the water, but leave just a bit so the blender can blend the chile easily. Add 1/4-1/2 of an onion and the 2 cloves of garlic. Blend until liquefied.

4. Add salt to your liking.

5. Once your pork chops are cooked thoroughly pour in the sauce.

6. Let simmer for 10 minutes then serve with your choice of sides.

ENJOY!
