Avocado Chicken Salad | Ensalada de pollo con Aguacate

     I know that we are supposed to be in the Fall season, but this whether is not getting any cooler. For this recipe I decided to do something fresh and fast to make. It is also healthy and it can be a nice main dish or a side dish. The things you will need are...


  • 2-3 large boneless chicken breasts
  • 2-3 ripe avocados
  • Grape tomatoes 
  • 1 can of corn
  • 1 head of romaine lettuce 
  • 1 cup of Cotija cheese
  • Italian dressing

1. Cut up your chicken and cook with your choice of season. 


2. Wash and cut up the romaine lettuce. Add the grape tomatoes.


3. Grind or shred 1 cup of cotija cheese.


4. Add the corn top the salad.


5. Add the cotija cheese.


6. Cut up the avocado. 


7. Once the chicken is fully cooked, add to the salad. 


8. Add 1/2 cup of Italian dressing and toss gently.
