- Pre heat oven to 350 degrees
- 1 1/2 cup of carrots
- 1/3 cups of brown sugar
- Two 2/3 cups of powdered sugar
- 4 eggs
- 1/2 cup oil
- 2 tsp vanilla
- 1 1/4 flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 nutmeg
- 16 oz cream cheese
- 1/2 cup of sour cream (optional I did not use this ingredient.)

1. Wash and peel 1 1/2 cup of carrots.
2. In a bowl, add 1/3 cups of brown sugar, 2/3 powdered sugar, 2 eggs. 1/2 cup of oil, 1 tsp vanilla, 1 1/4 flour, 2 tbsp baking powder, 1 tsp cinnamon & 1/2 tsp nutmeg.
3. Add the carrots and mix thoroughly.
4. In a separate bowl add the cream cheese, 2/3 powdered sugar, 2 eggs, 1 tsp vanilla & 1/2 cup of sour cream.
5. Mix thoroughly using a hand mixer until its a thick consistency.
6. In a baking dish, spray some cooking oil and pour in the 1st bowl.
7. Pour in the 2nd bowl.
8. Tap the dish so it is evenly distributed.
9. Place int he oven for 45 minutes or until the tooth pick comes out clean.
10. Let cool or let sit over night in the fridge and serve.
