Asparagus

There is a scene in the movie "Eat Pray Love," where Liz played by Julia Roberts, is in Italy. She decides to stay in one night wearing a beautiful dark brown night gown and fixes herself some boiled eggs, ham, grapes, bread and asparagus. She then sits on a small table cloth she placed on the cold cement floor of her small apartment. She looks down at her food ready to enjoy and says "Dolce Far Niente" picks up an asparagus and bites into it releasing an infatuating crunch.

Today, I will be sharing my way of how you can accomplish some tasty crunchy asparagus. You can pair this with a main dish such as a steak, potatoes or a salad. The things you will need are...

  • Asparagus
  • 2 tbs of vegetable oil
  • Salt
  • Pepper
  • 1 tbs of garlic powder
  • 1/3 of diced onions

1. Was and cut the ends of the asparagus.

2. In a warm skillet, pour in the vegetable oil and the onions.

3. Place the asparagus in the skillet.

4. Let the asparagus cook on medium heat for 10 minutes.  Add the garlic powder and salt/pepper to taste.

5. Then cover the skillet and cook for another 10 minutes on low heat. Check to see if the asparagus is tender just enough for a soft crunch.

ENJOY!
