Cactus salad | Ensalada de nopal

Lately, it has been really hot. Many of us have been looking for something to cool us down in this heat. From icy drinks to fresh cold meals. One of the dishes that I wanted to make was a cactus salad. My grandma had given me a large bag of cactus from her backyard, so I decided to make this dish and another dish that will be featured in a later post. The things you will need...

  • Cactus
  • Tomato
  • Onion
  • Cilantro
  • Chile Serrano (Optional)
  • Lemon

1. Grab as many cactus as you would like in your salad and cut them into small squares.

2. There are two ways to cook the cactus. The point is to remove the slimy liquid that comes out of the cactus.

You can either boil them

Or you can add a bit of oil and cook them over the stove.

3. Once that the cactus is brown and well cooked, remove from heat and drain them under cold water to cool them down.

4. While the cactus is cooling down, cut up your vegetables.

5. In a bowl pour the cooled cactus into it.

6. Then add all the vegetables.

7. Mix it all together and add lemon to your liking.

8. Add salt to your liking and taste test to see if the lemon and salt are to your liking.

9. Serve with some tortilla chips

ENJOY!
