     The things you will need are...


  • Boneless chicken breasts
  • BBQ sauce
  • Provolone cheese (optional)
  • Pineapple slices 

1. Heat up your oven at 375 degrees.


2. In a baking dish spray with non stick spray.


3. Place the chicken into the dish. As many peaces as you need. 


4. Brush on the BBQ sauce.



5. Add a slice of pineapple to each chicken breast.


6. Place 1-2 slices of provolone cheese. (The cheese is optional)


7. Cover and place in oven for 20 minutes.


8. After 20 minutes remove foil and let bake for another 15-20 minutes or until chicken is fully baked. In this step I removed any excess liquid and added more BBQ sauce.


9. Serve with a drizzle of BBQ sauce and your choice of side.

     Since Summer is here and it's Hot Hot Hot, this salsa is the best for a nice outside picnic or a BBQ.  It is so easy to make and you can make it either spicy or not. Another best thing about his recipe is that you can add almost anything you want to it such as mango, or avocado. The things you will need are...

  • 1-2 roman tomatoes
  • Half of a large white onion
  • 1/2 cup of Cilantro
  • 2-3 Chile Serrano (optional)
  • Avocado (optional)
  • Salt
  • Half of a lemon











1. Wash and cut up all of your veggies.


2. Mix all veggies together. Add any other veggies you would like in this step. 


3. Squeeze half of a lemon.


4. Add salt to taste.


5. Serve with tortilla chips.

     One of the first recipes my Mom and Grandma taught me was how to make tortillas. There are many different ways that people make these tortillas, but this is the most simple one that I have ever known. It may seem like a lot of work to make these handmade, but it reality it does not take that long. You can make these tortillas when making a delicious mole dish or even homemade fresh beans. There are only 4 simple ingredients which are...

This recipe makes a dozen small tortillas.

  • 2 cups Corn Four/Masa 
  • Palm full of Salt
  • Oil
  • 2 cups of Water
  • Pan







1. In a bowl, add 2 cups of Masa.


2. This next step is very crucial. I filled my measuring cup with 2 1/2 cups of WARM water. I poured in the water little by little mixing between pours. You do not want to pour in all the water because your dough might come out gooey. Add a palm full of salt.



3. It only took me 2 cups of water for my dough to come out just right. The dough should not stick to your fingers or hands.


If you accidentally add to much water, you can add more masa to even it out. 


4. Heat the pan & once its hot, add some oil so the tortillas won't stick to it.


5. Roll the dough into a small ball that fits in your palm.


6. If you don't have a prensa, just cut up a zip lock bag and find something to push down with.


7. Place ball on the plastic and press down with an object to make the tortilla flat and round. You can make them as thick or thin as you'd like.



8. Peel the dough gently and place on the hot pan. 



9. When one side is golden flip to the other side to cook.


10. One they are cooked, remove and place in a rag or a tortilla basket to keep warm.


11. Once all done, you may serve with a main dish.

     Alright, we all know we love a good taco, but sometimes they do charge a bit much for them. This recipe will help you save money & let you add as much meat to your tacos as you want. One thing I did learn, is that it is better to season the meat yourself. Some people may like purchasing the meat already marinated or seasoned but I found that it contains too much fat. I am more comfortable cutting or removing the fat from the meat myself. I also share how to heat up the tortillas just like the taco man does it so you can have the effect of a street taco. The things you will need are...


  • Carne Asada meat or Steak to grill
  • Seasoning
  • Small taco tortillas
  • Oil
  • Radish
  • Cilantro
  • Half an onion
  • Queso Fresco
  • Your choice of Salsa

1. Cut your meat into small squares removing any excess fat.


2. Season the meat with a special seasoning I got at my local grocery store.


3. Cook the meat on a skillet to your liking.



4. While the meat is cooking, wash & cut the radishes, cilantro, and onion.

5. To heat up the mini tortillas heat up a small skillet with oil.



6. Once the skillet is headed up place the mini tortilla & let cook until both sides are golden.



7. Place on a plate and add the meat.


8. Add the cilantro, cheese, radish and your choice of salsa. I used my homemade avocado salsa in which you can find here.
